These small bright red fish are typically smaller in size and offer a very sweet, bright white meat They are plentiful with oil. Unique to the longspine thorneyhead, is their light brown liver which is edible and is sashimi grade. It is comparable to the flavor of urchin but is slightly sweeter. Most of our customers prepare these fish whole, steamed, or pan fried.
Longspine are captured with longline in Southern California and are fished at depths that average 2,500ft.
