Opah is a very well decorated fish that has mixed tones of reds, gold, and silver; visually, it is a masterpiece of fine art. For taste, opah brings diversity to the pallet as there are seven unique cuts, all slightly different. Often called the "Pork Chop" of the sea, this fish tastes awesome and is Kat's favorite fish!
